Our journey to (hopeful) perfection continues as we explore different ingredients for this beer style. On this batch, we used a different yeast strain from Belgium, as well as a new world noble-type varietal from our pals at @royfarms called Adeena. The combo of the two, along with that Euro Pilsner malt and Spelt, create a flavor profile of wildflowers, pear skins, black pepper, and lemon zest. Wonderfully dry, with a dab of mid palate sweetness.

Imagine being a Koala - all cute and shit, and just hanging out in trees and catching z’s. That said, all they eat is bamboo, right? Shit has to get kind of boring. And here is Raul in this craft beer world that is over saturated with IPA’s. And you know what? Like a Koala who said, “F—- this bamboo shit. I’m going to catch a bird for dinner.” Raul decided to go against the majority and he got himself this Belgian Ale instead of an IPA. And it’s not that bad. And that’s about it.
