Craftrock-style cold IPA with Citra, Riwaka, Mosaic, & Nelson Cryo hops.
Back in January, I had the pleasure of drinking this beer at the Japan Brewer’s Cup made by our good good tomodachi, Ryo of Craftrock! Ryo explained his process of using of sake rice with koji to convert the rice’s starch into sugar, and then mixing together the barley mash once that step was complete. He sent us his exact recipe that we then brewed on our system for our next installment of the Ghostwriter’s Series! Tasting notes? Think lemongrass, diesel, grapefruit zest, and medical grade mowee wowee.
