In our home of Westwood, we discovered and cultivated a special mixed culture of microorganisms that result in this utterly unique ale. After the bulk of fermentation is finished, an amber ale is sent to oak barrels that house this culture, and the result is filled with aromas and notes of red fruits, stone fruits, and oak. A pleasant acidity follows to give a nice vinous character to the beer, and it finishes dry and lightly tart.

8.3 ounce bottle, 2021 vintage, thanks to Brutaltruth for this one! Served in a Teku, the beer pours a somewhat murky amber color with about a half inch light tan head that stayed around a long time. Not much lacing at all. I like the aroma, the brew smells like oak, tart berries, grapes and some earthiness. Taste is similar to the aroma, but with the addition of some red wine and cherry, and a bit of vinegary flavor. Mouthfeel is medium, carbonation is pretty low. I liked this one overall, it's tasty but the lack of carbonation hurts the score some. Hope I get to try a fresher batch of this at some point!

From the tiny bottle in a snifter. This solid tart pours a lightly
muddled brownish amber with a modest head of off white foam
that settles to a thin ring, thin dusty layer, and shows subtle lacing.
Nose of vinous oak, tart cherry, subtle strawberry, and light
honey malts. Flavors excel in the tart realm with vinous oak
giving notes of Cabernet, tannin, light honey sweet malts, tart
cherry, and light balsamic touches. Mouth feel is medium, faint
to zero carbonation, and a tart dry finish.

Overall, a solid brew.
