Appearance: Hazy, medium golden color, with a large, dense, and quite persistent white head. Fine-beaded lacing coats the glass walls in a thick sheet.
Aroma: Citric, particularly grapefruit hops, with some lemon rind, dominate, hints of pine tar. Biscuit malt underlies this, providing a sturdy base for the hops. As the taste progresses, the hops reach ascendancy, utterly dominating the taste, without being excessive. Finishes with a lingering note of mild pine and grapefruit.
Taste: Moderate citric hops, mainly lemon and grapefruit open the taste. Biscuit malt presents in support of the hops.
Mouth feel: Smooth, soft, full, and very pleasant.
Drinkability/notes: Very nicely done,, Celis lives on, I am sure that the shade of Pierre looks on approvingly.
Presentation: Packaged in a twelve-once brown glass longneck bottle with a pry-off crown, served in a South American-style Pilsener glass. Bottled on 02/13/18.

12 oz. bottle poured into vertical tulip

L: bright yellow, clear with careful pour, thick head of fluffy white foam over an inch tall; I left the the bottom 2/3-inch of beer in the bottle, and it looks like yellow opaque milk — I might lightly swirl around the next bottle I pour and see what the beer looks like with all that stuff in the glass; some sticking, a little lacing, keeps a thick collar and a good skin of foam
S: grapefruit, lemon drops, old dried out hops that have gotten a bit funky ... hops that normally would give off a kind of "green" aroma like cilantro or grass but have aged
T: lemon drop, sweet grapefruit, citrus peel, a little balancing earth flavor that lingers in the aftertaste; the lightest hint of a witbier clove flavor ... it's barely there
F: fluffy and light up front; crisp and filling on the end
O: at almost four months old, this beer is incredibly good; it's never too much of anything, and while it may not come off as a New England IPA (or any other kind at just 5% ABV), it's shockingly better than I anticipated; the age scared me a bit, but I'll not doubt Celis again

I really enjoyed this beer. Not super hoppy like most IPAs, but a ton on fruit and citrus. Well balanced, great beer.

Pours a hazy orange yellow with a sizable head with staying power. Immediately hit by a bright citrus smell that is remarkably refreshing. The refreshment is continued in the taste and the citrus is accompanied by the bittering and spice and phenols. The hops are well balanced with malt and the end is very satisfying. Quite sessionable for an IPA. The mouth feel is thick and this adds to the character of the beer.

Pours a hazy golden yellow. Good retention and lacing.
As a wit beer, this isn't bad. But an IPA? I get esters, bubblegum, light candied lemon, peppery spice. Another review made this comment - more like a belgian pale ale. This tastes just like their wit beer.

Poured from bottle into Celis tulip, monster 3 finger soapy cream colored head, good retention and lacing. Clear pale yellow in the glass, sediment towards the end made it hazy. Getting biscuit, some lemon, citrus and some bubble gum on the nose, esters are pretty good here. Finishes with a nice peppery mild bitterness. Not sure I would call this an east coast IPA, this is more like a hoppy belgian pale, which I am fine with, as there aren't that many of those around. I have been waiting for this to land in Houston in the bottles and glad it did. This will probably hang out in my fridge. Very approachable and will go well with most foods.

This is an East Coast style IPA. I love hops and this one is so dreamy!!! The body is slightly hazy and juicy. The smell is grapefruit and citrus. The balance of hops and smoothness is perfection!!
