A collaboration with our friends at Cushwa Brewing Co., Ion is a full bodied imperial stout with roasted malts & notes of chocolate, toffee, caramel & nuts. Conditioned on Snickers & Heath Bars.

Served in a tulip
The beer poured a super dense and oily, absolute pitch black and was topped by a bubbly, two-finger tall, burnt sienna colored crown that quickly dissolved. A few medium sized particles floated atop the body. Steady streams of tiny bubbles ascended to the top of the liquid.
The aroma was very strange and definitely smelled of an infection. Roasted and caramel malt were noticeable. Touch of char. A tart, sauerkraut-like note was apparent too. As the beer sat, the sourness mellowed slightly and some nuttiness came forth. Semisweet chocolate and caramel notes appeared as well.
The flavor was also oddly tart and tangy. The sour character here reminded me of a mix of underripe raspberries and sauerkraut. Moderately roasty up front. Touch of sweetness too. Hint of nuttiness perhaps. I had a difficult time concentrating on the flavor notes however as the sourness distracted me from everything else. More lingering tartness on the back end and the finish. Some caramel-like sweetness was also detectable.
The mouthfeel was thinner bodied for the style and contained a fine, fizzy effervescence. Pretty typical for an infected beer.
Although this beer was an infected mess, I could still pick out many of the flavor nuances and adjuncts in the stout. With the initial reviews looking quite promising, it is a shame to see what this turned into over time.
