This beer was open fermented with a clean Saison yeast. We then refermented in neutral wine barrels with our house mixed culture and matured on plums and cinnamon sticks.

Appearance: Pours the color of a light fleshed plum with a foamy one finger head; decent retention and splashy lacing
Smell: Acetic plum and currant tones with oak and a hint of cinnamon
Taste: Very acetic, at the outset, with just a hint of plum flavor; funky, dry and oaky, through the middle, with the cinnamon making an appearance in the finish
Mouthfeel: Medium body with moderate carbonation; puckery
Overall: I don't care for this fruit treatment as much as some of the others from Barrel Culture; it is very acetic and the fruit is not as prominent; the cinnamon just exacerbates the sourness by bringing some spicy heat

A - Poured into a Kate the Great tulip a nice hazy light purple plum juice hue with a thin white head that fades to leave light wisps and a thin halo.
S - Aromas of very balanced plum juice. Really nice subtle cinnamon notes, really good balance between the two.
T - Taste is similar to the nose with really nice slightly warming cinnamon notes. The plum is rather subtle with some light tartness. Good fruit notes.
M - Mouthfeel is lightly carbonated with nice clean finish.
O - Overall this was a rather solid beer with really pleasant plum and tartness. The cinnamon is nice and restrained and balanced.

Little fizzy head attempts to form with an aggressive pour, but fades instantly, murky rosy peach amber orange color
Nose big tart fruit, decent tart berry, a little cranberry and tart boisebenrry like thing, tart a bit flemmy, just a touch of cinnamon, little lemony too
Taste brings sweet candy malt out front, big tart fruity, sour malt, fruity fig and lemony notes, lactose funk, raw bread dough, bacteria sourness, fair lacto creamy funk almost yogurt like, fair cinnamon and spice notes, not really spicy and no alcohol, dry but flemmy , a touch of plum but barely
Mouth is med bod, decent carb,bit flemmy and acidic
Overall not bad, decent beer, good sour fruit and nice acidity, good cinnamon, etc
