Root, Sea, & Citrus was fermented with our house kveik blend then inoculated with our brettanomyces and lactobacillus blend. We then conditioned on sea beans foraged by our good friends at @revelrybrewing in Charleston, SC. The beer was then finished on orange zest, lime zest, ginger, and sea salt.

A: Poured into an oversized wine glass to a bright and slightly hazed straw yellow topped by a dense and slightly rocky finger of white head which fades quickly to a collar around the edge of the glass with minimal lacing
S: Smells of ginger, lemon and lime zest, nice sourness, and some sharpness from the salt. Hints of vanilla like aroma at times as well
T: Taste is citrus forward up front with some lemon and lime, slight funk, ginger, an odd taste that I'm guessing is sea beans, along with some salt. On the swallow there's more citrus zest, lingering tartness, hints of pale malt, and slight lingering ginger.
M: This beer is fairly light in body but it is not watery. Carbonation is effervescent and slightly prickly while the beer has a slightly dry finish due to the acidity.
O: Overall this is an interesting beer. It has some really nice flavors and a good amount of complexity. I'm not sure what flavor influence the sea beans have but the citrus and ginger make this one very nice. Worth a try if they bring this one back.
