We started with a two barrel blend containing pilsner, wheat, and buckwheat. After barrel-aging with our mixed cultures, we were left with a beautiful nuttiness to the beer that the buckwheat provided and felt cherries would be the perfect pairing. After refermenting on cherries we decided to condition the beer further on a cocoa nib and husk blend from our friends at Videri chocolate. Bottle-conditioned.

A: Poured into a Duvel tulip to a light red beer which is topped by a dense and slightly rocky finger and a half of pink colored head which fades quickly to a collar around the edge of the glass with minimal lacing.
S: Smells of sour cherries on the nose and a hint of funky oak.
T: Taste is sour cherries with a slight nutty note, hints of funk and a touch of oak with cherries coming back around. On the swallow there's more of that nutty sour cherry, a touch of wheat, and some slight funk with some lingering sourness.
M: The beer has a body which is on the lighter side and may lean a bit toward being watery. Carbonation is effervescent and prickly at times while the beer has a drying finish due to the acidity.
O: Overall this is a really nice beer. Slightly one dimensional but big cherry flavor isn't a bad thing to have in a beer. There are some other flavors going on but they're really playing second fiddle. Overall worth a try if they make this one again.
