Rosehip Kölsch
Folding Mountain Brewing

650ml bottle - made with locally foraged rosehips, in honour of our provincial flower, apparently.

This beer pours a clear, bright medium golden yellow colour, with four fingers of puffy, finely foamy, and mildly fizzy eggshell white head, which leaves a bit of scattered paramecia lace around the glass as it quickly evaporates.

It smells of rose attar, bready and doughy cereal malt, some earthy yeastiness, indistinct citrus notes, and plain leafy, herbal, and floral green hop bitters. The taste is gritty and grainy pale malt, somewhat musty yeast, a weak generic spiciness, faint rose petals, and more earthy, weedy, and floral hoppiness.

The carbonation is fairly restrained in its wan-seeming frothiness, the body a decent middleweight, and generally smooth, with nothing really getting in the way of a mild, evolving creaminess to boot. It finishes off-dry, the malt and fruity floral essences putting in the extra hours, as such.

Overall - this comes across as a well-made version of the style, with the rosehip addition providing a nuanced complement to the hops. Crisp, and easy to drink, it was tempting me to go foraging in my literal back yard, but I thought better of it, as the only thing I would find there is weeds.
