Collaboration with Burial Beer Co. & Brouwerij Frontaal

Barrel-aged wild ale with coniferous trees and honey.

Pine trees often grow on cemeteries, planted there because they are a symbol of eternal life. Pine cones represent reincarnation and new life. When Burial Beer Co visited us together with Frontaal we took inspiration from their name and decided to brew a beer with pine. In our local food forest we found two varieties and harvested a few young branches.

After 10 months of aging Pine Trees and Cemeteries has become an exceptionally refreshing beer, with a refined acidity and rich notes of ripe fruit. We added local honey to bring out these flavours even better. In the background you can taste a lingering echo of pine needles with a soft tannic bitterness of pine wood.

750 ml bottle, batch #1, Cardinal Pub & Bar, Stavanger. ABV is 6.7%. Golden colour, only slightly hazy, with a minimal white head. Aroma of pine needles, apple cider, farmhouse, honey and oak. Very moderate carbonation, but not lifeless. Medium sour flavour of pine, honey, apple cider, brettanomyces, apple cider vinegar.

Pours a cloudy, deep golden amber, coppery coloration with a tiny, fizzy head that soon fades to nothing. Smells of doughy malt and quite a bit of musty, blue cheese funk and lighter fruity esters, with just a hint of honey and oak. Taste follows the nose, with a great balance of doughy malt, fruity esters of tart green apple and gooseberry, some musty, blue cheese funk, some citric acidity and lighter notes of white grape, honey sweetness and earthy oak, with the merest hint of pine as well. Finishes with a medium tartness and some fruity esters, citric acidity and funk lingering in the aftertaste. Smooth mouthfeel with a medium body and light/medium carbonation.

This has got a really expressive brett character to it, with an excellent balance of tartness, acidity and funk, as well as some vibrant fruity esters and a mellow honey sweetness and earthy oakiness that all work together very harmoniously, creating a complex, well-rounded flavor profile. It's just a bit of a shame that the eponymous pine notes are not really coming through all that much, remaining a faint echo in the background.
