100% natural fruit beer
Wild beer with South Moravian fruit. Summer in taste and smell. As a basis we use beer aged for 9-12 months in oak barrels. We add fruit and allow the beer to re-ferment to dryness. The result is “Fly with me”, our first spontaneously fermented wild beer with fruit. All together we spent cca 2 years with this beer.
Apricots - we use 3 apricots varieties to gain proper aroma and taste. Apricots are the most typical fruit of our home region and we use only fruits from local farmers.

Poured from squat, brown, 11.2oz bottle into glass.
Cloudy, apricot gold colored body. Minimal white head dissipates to bubble fed ring. No lacing.
Aroma dominated by apricots, but accompanied by lemon and faint oak barrel.
Taste is tart and sour. Has a real apricot taste, with dimensions of the flesh next to the stone out to the velvet of the skin. The tannic oak comes in half way through. What is interesting about the taste is the interplay between the tart and the sour. Puckering to teeth scraping. Quite dry on the finish.
Medium mouth feel and not lacking for carbonation.
The apricot really dominates throughout but this is complex and not one note. Glad I got to try this, as I like apricot sour beers.
