there was some confusion about town whether this was number three or four in this series. the tap handle said three, the bartender said four, but i believe it to be the three here, an ipa with this newly popular nordic yeast, which i have seen used a lot more in saison types than hoppy beers, so i was excited to try this. its deep golden to brass in color from the tap, clearer at one establishment than another (maybe three and four exist concurrently?), but it holds a nice head, smells really citrus forward, and has just a little belgian sort of ester to it from this yeast a hint of pear and red apple and white wine there, but subtle, behind the hops for sure. the flavor is pretty clean and dry even with a little fuller malt flavor and body, its well cleaned up by the yeast at the end, and some cool fruitiness exists in the middle, clementine and sweet lemon, apple, green grape, and light pink bubblegum. maybe a hint of spruce in here too, but it could be my mind playing tricks on me as i have seen this yeast in spruce saisons and juniper beers quite a lot. the hops have moderate bitterness, but this drinks more like a well balanced pale. the yeast is subtle but obviously different in this style. lots of flavor here overall, a neat recipe, not quite perfectly refined, but something i could happily have a few pints of. cool to see this yeast deployed a little bit differently here.
