I was working at a brewery in 2021, and they came to collaborate. They brought a bunch of beer, and I ended up with this beer; it has sat in my cellar until now. I am using a tulip glass and serving the beer at 50 degrees. The pour created a frothy, airy, one-fingered, light tan with poor retention. The quick dissipation left no lacing on the glass. The beer's color charts at SRM 36 are jet black with dark brown hues and are opaque. The appearance of the beer is average for this style.
Nosing the glass, I smell Maillard, char, chocolate, coffee, leather, oak, vanilla, caramel, molasses, toffee, raisins, figs, and floral esters. The malt profile is dark roasted malts, light bitterness, and bready, with lightly toasted cereal grains. Smelling the beer again, I smell earthy dirt, floral, citrus, and tobacco.
Sipping the beer, I taste Maillard, char, espresso, medium-roasted coffee, leather, tobacco, oak, char, light smoke, Maillard, toffee, caramel, burnt sugar, floral esters, dark-roasted malts, and bready. Tasting the beer, I taste citrus, earth dirt, vanilla, raisins, date, and a light soy sauce.
The body is heavy and has low carbonation. The mouthfeel is chewy and velvety, and the finish is smooth.
After sitting on this, I think the aged version did not help with the beer. I do remember when this was fresh, and it did not have as much Maillard. Overall, it is a good imperial stout.
