Our Preserva series of seasonal fruit sour beers take inspiration from traditional preserves, from the use of salt and coriander seed to live lactic fermentation and fruit selection. #2 gets all jammy with liberal additions of Strawberry during fermentation.

440ml can. The first in this series of sours from Unity was based on marmalade. This is based on strawberry jam. It’s fresh and tart and salty. The strawberry shines through without getting heavy or cloying. Not so much like strawberry jam, more like strawberry juice. Even its pale apricot colour (rather than a bright red) emphasises the light, natural approach Unity have taken. Very good.
