fun a fruity gose, summery and different, lots of cool extras in here, cool effort. it looks just slightly dense and heavy for something seemingly designed as a summer drinker, its pinkish orange and rather hazy and sports a thin but airy white head. the nose on this is awesome, sweet juicy real pineapple, the tangy guava with the lactic souring, minerals from the salt, and a pale wheat malt base to me, also highly floral from the pink peppercorn and hibiscus additions, a neat combination of smells here, tropical and summery but also not over fruited or sweet, and the salt seems to try it out. the flavor is great too, although i do wish for a little less body to it. the pineapple is again the most forward but this is a veritable island fruit cocktail, i get some citrus acidity too, this isnt overly sour but it has a nice clean pucker too it that is accentuated by the salt, i love this in this style, especially with fruit. the fruit is natural, rightly dosed, and fermented near dry without wiping it out entirely. pink peppercorns do a lot in this, not spicy but that light characteristic perfume note, red berry, and with the bittering hibiscus at the end this has both great complexity and great balance. a lot of subtle cleverness in this recipe, and the ferment is lovely. intriguing and delicious warm weather drinker, could almost be served with an umbrella!
