A nice mild grainy tartness, a little bit like the Flintstones’ vitamins that my son gets, but in a good way. The grain and stone fruit play well together here. A bit of lemon. Not too acidic, fairly mellow. Head retention and carbonation are all there.

A remarkable beverage. If i may editorialize, it's Upright but rarer.
The nose is a goegeous, soft, saison blend that is sooooo much like Upright ( i had an Upright Ives Blend 5 shortly after this) with soft honey, beautiful fruit expression of plums and delicately floral honey, and a real, sodt dunk that complements the fruit in a true PNW way, a more wet, damp, earthy, musty dunk rather than a more tart, phenol driven funk. Drying, fruity, soft on the finish, this is excellent.

This beer was created with a blend of young spelt saison primary fermented on second use plums and ploy ya that were used in the making of 2019 EXOCULO and 2019 Time/Eternity. The saison wort Fermented and aged on the fruit in tank before blending with two separate oak fermented and aged wheat saisons, the fruit in this beer includes flavor grenade plouts grown by collins family orchards in Selah, Washington as well as organic shiro and Howard miracle plums from JC in Okanogan, Washington refermented to condition with raw Washington honey. 4.5 the absolute lowest, so balanced and complex.
