This bottling represents a single barrel of saison refermented on apples. In late Fall 2022 we milled and pressed organic Winesap apples from Filaree Fruit in the Okanogan Valley. That juice refermented in barrel with aged spelt saison. After primary fermentation it was topped with additional oat saison and then allowed to age through Winter and Spring. The resulting beer was refermented to condition in the bottle with local raw Star Thistle honey.

750ml bottle at share. Pale golden pour with a fine white head. Aroma is yeasty, grassy with notes of apple. Taste brings out the apples a bit more, still supported by a nice robust saison base. Fruity, sweet, funky.
