Since modern beer originates from Europe, the ingredients tend to mirror that. We believe that beer should try and reflect the local flora and fauna. Our local maltster Matt Cunningham of Rustic Brew Farm produced some lovely malted corn for us. After over 11 months in barrels, we got this wonderful beer that highlights the barrel and local malt. We plan to further explore this style while highlighting more native grains in the future.

Poured out of 12 oz. can into a tulip glass, this beer pours a somewhat cloudy/hazy, light to medium golden color with a nice white head that's about 2/3 an inch thick. Head eventually settles to a thick ring lining the inside of the glass along with some nice cluster swirls of film layer surface foam. Aromas of some slightly bready, zesty malts along with corn and oak barrel notes that's followed by some barnyard funk notes. A bit of horse blanket, must, hay, etc. A very similar flavor profile with the aforementioned slightly bready, zesty malts along with corn and oak barrel wood. The wood taste is young, as opposed to an aged and charred woodiness. The corn adds something unique that I haven't had in very many, if any, other beers of this style along w/ the funk notes of must, hay, and horse blanket that give just the right amount of sour taste. No discernible hop flavors here, and that's to be expected I suppose. Good balance of all the flavors. Has a Has a crisp, smooth, light to medium bodied mouth feel with moderate carbonation. Also has a meaty body. I know that sounds kind of weird, but that's the best descriptor I can think of right now. Meaty. And in a good way too that absolutely works here. Has a clean finish, and all of the flavors linger very nicely on the aftertaste. Quite an excellent beer of this style.
