Cinchona, pronounced (sin-cho-na), is a type of tree found in South America. Historical usage of this tree’s bark has been for its medicinal properties linked to the alkaloid quinine. We steeped cinchona bark in our sour red that was aged for nine months in Watershed Bourbon-Gin barrels. We finished the beer with a blend of citrus zest. The flavor profile is a play on a gin and tonic.
