Cheers to our friends at Land Grant for trying new things with us! Prior to this collaboration we had never heard of Sotol. It is a spirit native to Mexico and derived from the Sotol plant or "desert spoon". After 13 weeks in the barrel the resulting beer is soft and complex; perfect for the hot weather, and could even be accentuated with a lime wedge.
