as good as it gets, certainly the best i have had from these guys, a lucky find out in the wild, small format, shared a couple of ways, really impressive stuff, starting with a really woody and funky and mature stronger lambic, this clocks in at 8.8% according to the label, must be some batch variance here. looks the part, golden flaxen to brassy toned with the smallest deviation from full clarity and an airy excited white head, the aroma pretty much fills our hotel room, heavy musky funk, more brett than bacterial acidity to me, but still tangy with lemon and minerals there, old wheat, sour grapes, pears, and sturdy white wine, white florals, even elderflower specifically, dandelion too, white tea, faint peach, and really fermentation forward even though the grapes are mega in here, i cannot stop smelling it before i even taste it, epic nose, super mouthwatering, mature and refined and unique, wow! really vinous in the nose but it never comes at the expense of all the nuance of the base lambic, which is wood forward, bretty beyond belief, and crazy farmy and distinctive, not quite as sour as it smells but piquant for sure. a slight underripe grape thing, definite champagne character too, wet concrete, true barnyard funk, cut flowers, green apple, white peach, zested lemon, and a certain overall flavor intensity i just love, hints of iodine and bleach in that old lambic way, smoothed out by the oak, and polished real well, very high end, very winey, and with beautiful effervescent carbonation making it all seem so light and fast, and this was just gone so quick, but totally wonderful, like among the best lambic types ive ever had, i need to track down some more of this, so light for being strong, super alive, mature but jubilant, as good as it gets!

Golden colour, slightly hazy. White foam, high, not long-lasting, disappears quite quickly without leaving even a few small bubbles.
Aroma decidedly sour, "wild", funky, fruity (fermenting fruit, grapes), there are plenty of wood, stone fruit, leather and countryside aromas.
The taste is sour, fruity, with a very pronounced, for a lambic high, bitterness. The bitterness has a stone fruit character, rough, dry.
The alcohol is well hidden. Saturation high, effervescent. Texture quite smooth, despite the rough bitterness. Body moderately full. Aftertaste long, intensely acidic.

Cellared a year. Murky dirty blonde pour, white collar. Aromas of vinous grape, sour lemon and big barnyard funk create a vibrant base for lighter aromas of bright oak, apple and hay. Taste starts with big barnyard and cheesecloth funk atop vinous grape and sour lemon in a younger lambic. Again hay, apple, oak, and flowers come in lightly here and there in sips. Feel is not as funky as the other aspects, leans more into the sourness in a bright and effervescent way. Seems a year is a sweet spot because this is drinking beautifully

It looks like a slightly less bubbly version of champagne.
Smells like champagne.
Tastes like less intense version of champagne with a touch of beer mixed in.
Overall, I don’t like champagne. When it is made a little more beer like, it still isn’t great, but it’s better.

This lambic is a great substitute for champagne. From the look, to the nose, to the taste, it could be a stand in for it on television. The start is citrusy with a touch of honey and definitely grapes. However it finishes a little less sweetly than champagne. It paired well with a chicken stir fry.

375 ml capped and corked green bottle, Cardinal Pub, Stavanger. ABV is 8.8%. Slightly hazy and pale yellow colour, pours vigorously sparkling with a large to moderate head. Aroma of white grapes, mild spices / herbs and brettanomyces / farmhouse. Tart flavour, notes of brettanomyces and white grapes, low bitterness.

Bottle: Poured a clear golden color lambic with a nice large foamy head with good retention and some lacing. Aroma of funky ester with some grapes and vinous notes is quite nice. Taste is a complex mix of funky ester with some vinous notes and oak with some grapes with a trat finish but no acidity. Body is about average for style with good carbonation. Solid mix of vinous notes and lambic for a funky and drinkable beer.
