Sip against the current with the first in a two-part collaboration with Speciation Artisan Ales. This crisp kettle sour was brewed with a select amount of the culture from Speciation's previous Laurentian: Erie batch, and Brewer’s Gold hops from Michigan were added for a taste that’s funky and fresh. A portion of proceeds will be donated to the Detroit Riverfront Conservancy.

Not a fruited kettle, but a kettle sour with special ingredients and it shows. Looks and smells relatively basic, has the look of a slightly darker pilsner, with a nose that gives citrus fruits, lactobacillus milk tart, a touch of parmesan savory funk. Drinks medium tart- I see a lot of folks claiming this otherworldly with the tartness, but for me its right in the middle, especially knowing how freaking sour Speciation's spontaneous ferments can be. What sets it apart for a kettle sour is this insane crunching minerality, salinity on the bite. Tingling and sensational, I think it could be a product of the mixed cultures used in fermentation. The flavor is highly citric, lemon, pink grapefruit, blood orange, but gets a lift from a combination of the milky and salty yeast strains, really takes on a refined cheese board sensibility, olives and all. Lives up to its name, didn't know a kettle sour could have this much funk!
