Years ago I enjoyed the precursor to this ale, Bill's comparably profiled and functionally titled Spruce Lager. The recipe has since been revised with the lager attribute retired, and the original brewer moved on to found the Fort George Brewery in Astoria.
Though it's now long gone, the Spruce Lager lingers in memory as my preferred choice among Bill's two beers brewed with locally harvested Sitka spruce. The crisp elements of a bottom-fermented beer would seem to pair better with the tonic, arboreal qualities of evergreen needles.
The Spruce Ale's aroma wanders at first through something dank and mushroom-like, then a lime-like sweetness akin to 7-Up, and finally a resinous pine. The downy soft head quickly recedes revealing a densely translucent, vivid yellow body visually resembling a bright hefeweizen. The beer is agreeably flavored with more notes of 7-Up and limeade, and tilts mostly to the sweet. But overall it is somewhat shy in temperament and has a watery body that leaves a miniscule residue in the glass. The finish is clean with a distant echo of spruce bough and cane sugar.
Bill's Spruce Ale is a nice beer for a summer's afternoon. It scores well for originality though it lacks excitement.
