When my grandfather was a young man, he was known as "the wolf of the bay". Later in life, he aptly named his boat “The Bay Wolf” where I learned to respect the water from a legendary bayman. This beer is a tribute to my Pop Pop, Albertus “Toots” Clark Jr. Bay Wolf is a hoppy, approachable Honey IPA dry hopped with Styrian Golding and Amarillo hops. The huge late addition of Connecticut honey from Full Bloom Apiaries further enhances the floral character. Galena, Cascade and Citra were also heavily used to round out the hop profile. A pinch of sea salt is a tip of the hat to the bay itself, to connect this brew back to the sea that has provided for my family.
