Wooly pig does it again. Malty, heavy. A tug of war between the sweet and the bitter leading to a perfectly balanced roasted, caramel finish.
I happened to be there for the bierstacheln event. Took the beer to new places. Toasted marshmallow and amping the malt up. Glad I went.

Clear brown with red edges and a tall chocolate milk head that's convexly puffy.
Nicely bready, lightly toasty pumpernickel is accented by a tangy zip and a slight touch of zucchini bread with hints of woodiness without smoke.
The medium body's soft froth comes to a tingly yet semi-dry finish.
Though here for the bierstacheln, I had about half a pint before I brought it over to the fire for the hot poker treatment. This process adds a very soufflé-like fluff to the head that's really satisfying and totally as though edible, while also exhibiting the flavor and aroma components pulled straight out of the fire: that of freshly woody campfire, but not too smoky, and actually more leafy and herbal. That the beer is cold but the head is nigh on hot is an exciting contrast.

In November 2025, surrounded by an unexpected number of playing children and dogs, even compared to usual, while the pigs and donkey are being fed pears, a clean, cold half liter pour on this unseasonably warm yet still overcast day expresses a uniquely refreshing tang. It's not too estery, yet gives a bit of Dr. Pepper sassafras amidst a slightly chocolatey and earthier base. It's faintly nutty, almost like a brown/red combo, while at times I get suggestions of palo santo, an old favorite.
It's more complex than most takes on the style, but especially from what the bierstacheln allows it to be. Frankly, without that, it's even better than my original 4.44.

Big thanks to Corey for another Wooly Pig gem. I love this brewery.
Not knowing what to expect as it's simply called "Bock", I'm surprised and pleased to see a beautiful dark brown pour. Highlighter with chestnut and garnet glimmers, it's a pretty beer despite being a bit muddled. On top rests a great, massive light tan blanket that retains and leaves spotty lacing.
First thing I notice from the aroma is a holiday spiciness. Brown soda bread, a dash of fig... Smells like a first day of winter treat.
Flavor follows but throws in some cherry juice and brown sugar. Or perhaps more like caramel. Either way, a dark sugary contributor. There is a nice earthy not on the finish.
A decently rich feel, like that of your classic Dopplebocks despite this ones slightly lower abv (given that this guy seems to be in that vein). An even carbonation and just slightly leaning on the sweet side, but a nice roasty bitterness brings it close to balanced.
Another winner from Wooly Pig. I continue to enjoy every one of their offerings, and always get excited when one of their bottles stares back at me.
