Mixed Fermentation collaboration with Kuma’s Corner. Insatiable Dreams is a blend of spelt Saison fermented & aged in a foeder for 7 months and blended with a white wine barrel containing Brett Saison, and a red wine barrel containing acidic fermentation Saison.

Mixed fermentation wild Saison, both foeder and wine barrel aged. This is really good stuff, which is becoming par for the course from Hacienda. I hope the rumor I heard about their barrel guy leaving isn’t true.
Bright saturated golden orange, three fingers of foam that settles to a thin veil and spotty lace around the edges of the glass.
Aroma is bursting with dry-hopped fruity citrus and big oak notes.
Lemon zest and dill, dry oak, tangy lime, grapefruit, apricot notes. Spritzy, crisp and dry in the finish. Lighter side of medium bodied, oaky aftertaste. Overall this is great stuff, and I hope it’s not just a one-off collaboration.
