Soul Memory is inspired by our love for Czech Dark Lagers, although not traditional by any means. We brewed the beer with Pilsner, Munich, Carafa, Midnight Wheat, and Chocolate malts—really pushing the color beyond black. We layered German Hallertau Mitttelfrüh and Czech Saaz hops across multiple hot-side kettle additions, before fermentation with our favorite, super crisp German lager yeast strain. 5.0% ABV. This beer is easy, breezy, super roasty, and extra smooth.

Pours pitch black, dark and shiny, completely opaque. Thick and frothy dark mocha colored foamy head. Head settles in and the steadily dissipates leaving just a ring of foam along the outside of the top of the beer. In appearance, if I did not know what I was looking at I would guess this was a stout - its that dark in appearance.
Aroma has notes of roasted malts, light wheat notes, pumpernickel bread, hints of cocoa, coffee, and certain whisper of sweetness on the nose reminiscent of maple.
Taste has notes of lightly roasted malts, pumpernickel bread, coffee, cocoa, with a hint of wheat. There are light spicy notes from the hops on the back end. Essentially no sweetness comes through in the profile. its dry to the point of having slightly powdery quality.
Feel is medium bodied, smooth, dry. Moderate carbonation.
Overall this is a nice beer - reminds me of a solid American interpretation of the Schwarzbier/Czech dark lagers.
