A blend of two batches of 100% spontaneously fermented beer originally brewed in the fall of 2018. The beer was brewed with our Baileys Harbor well water, Pilsner malt, raw wheat, and local whole cone hops. Each batch spent a night in our coolship to naturally cool and innoculate with local microflora, before spontaneously fermenting and aging in oak barrels for over two years. No yeast or bacteria was ever intentionally pitched into this beer. After blending, we naturally refermented the beer over many months in the bottle.

Bright gold with ascending carb streams, a finger of foam that fizzles audibly. Eventually poured in some dregs that clouded it up a bit but tastes even better somehow.
Apple aroma at first, becoming citrusy with grapefruit and lemon, even some tropical passionfruit. Pretty nice as it warms.
Tart and citrusy, oak forward and dry. Grapefruit, lemon, and passionfruit. Crisp with smooth carbonation and manageable acidity. Fruity, tart and oaky, not especially funky. Overall it’s well balanced with some interesting fruity complexity.
