The Third Steeple is a collaboration blend with our friends at Bad Moravian in Ephraim, WI. This beer is a blend of hoppy foeder saison that spent 7 months in oak and two batches of rye saison that spent 16 and 27 months in oak. After blending, we conditioned the beer on Rishi Peach Blossom tea and cascara sourced by Isely Coffee Roasters. Then, we naturally refermented the beer over many months in the bottle.

Gushed upon opening, but not a lot of waste. Peach color with a little sediment throughout. Intrigued by the added Rishi Peach Blossom tea and cascara. Although I don’t know what they taste like, they do seem to add complexity. It smells of peach/tangerine/orange at the nose. Taste lactic tartness with a juicy orange/Tang mix. Just mildly dry, some noticeable earthy hops. Overall, enjoyed it, love the experimental Hacienda is doing.
