This beer began as a perpetually-blended saison refermented in freshly-emptied wine barrels with hand-processed petit verdot grapes grown by William Grassie Wine Estates. It was then back-blended with the base saison’s next generation for balance and naturally conditioned in the bottle with brettanomyces.
