this is really solid, which i guess all the beers in here are. such an unexpectedly awesome brewery, maybe my favorite from our trip to rochester. this is a classically styled kolsch, crisp and refreshing, but also heaps flavorful, with a nice little hop at the end and a just about infinite drinkability. its nearly perfectly clear, a little deeper yellow than a lot of these are, bright in the glass under a pretty white head. it smells old school a real fresh dry pils type malt to it and the classic kolsch type yeast, a touch doughy and earthy, but enormously clean when i drink it. the hop is a noble type, grassy with a hint of fresh lemon, a nice way to wrap this up, and a surprising degree of bitterness, it really works. it has a lagered feel to it, a summery lightness, but also some minerals and yeast character that make it substantial and distinctive. the carbonation is through the roof and this is nice and dry, it cuts the grease from my delicious sausage breakfast sandwich down really well, and seems to almost allow me eat more than i otherwise would be able to. a gorgeous glass of beer!
