This is aged 12 months in Willett rye, Willett bourbon, and Blackwater rum barrels. A triple barrel hidden gem! Poured cold to a Glencairn, there is only a fizzle of a head. It is a finger high at first, but all that excitement calms down. Lacing persists on the glass. Aroma is almost non-existent. I’ve been here before. This one will need to breathe and warm before anything significant can be assessed. Off the top, the rum comes to the fore, but I will wait…
After 15 minutes, bourbon starts to nudge a path…
After 30 minutes, a slight cherry note peaks into flavor and the aroma opens into an almost floral bouquet, maybe some amaretto cookie in there…
45 minutes and the rye comes into the fold. By now, this is almost fully transitioned into a drink worthy of its $30/500 ml price tag.
It really is complex. The aroma is genteel, fragrant, inviting. The barrel flavors are a kaleidoscope on the tongue. The 15.5% ABV is virtually imperceptible. Solo doming it was scarily easy. Do not drink this cold, unless you want to be disappointed. Pop the top, let it aerate, cook some burgers or have a cigar, then come back to it. Although an American style, the hops are never bitter or astringent. The middle base eventually brings out an almist English style quality, not quite J.W. Lee’s, but one could make an argument for it as a distant cousin.
