Okay this might take the cake for the most insane project we have done to date. Eld is an Imperial Stout that we triple barrel aged over the course of 50 months and treated with real Mexican vanilla beans. Let us repeat that...this new beer, Eld, is TRIPLE BARREL AGED over 50 MONTHS and treated with real vanilla beans. Eld started back in 2018 when we brewed a Double Mash 28 Hour Boil Imperial Stout designed for extended barrel aging. The liquid spent 22 months in Apple Brandy barrels, 10 months in 15 year old Thomas H Handy Rye Whiskey barrels, then 18 months in 10 year old Old Rip Van Winkle Wheated Bourbon barrels. After over four years of aging, we pulled the beer out of the barrel and treated it with Mexican vanilla beans.

Sweet milk chocolate, floral vanilla, and prominent barrel boozy nose on this one! Taste follows with a big and bold, chocolate boozy barrel finish...vanilla is there on the backend. As it warms, the sweetness from the Apple Brandy Barrel starts to assert itself more. It also becomes a bit more balanced with a slightly dry finish. Well done and really good!
