This pastry stout was built from the ground up to showcase the fantastic single-origin cacao we get from our friends at Cru Chocolate, along with a couple other harmonious flavors. We started with a large addition (think huge duffel bags) of cacao husks in the mash, which lended a rich chocolate aroma before the beer even went into the fermenter. After fermentation, we infused a hand-picked blend of cacao nibs from Honduras, Guatemala and Nicaragua. On top of that, we brought in some of chocolate’s best friends: a large addition of freshly-toasted hazelnuts, and vanilla beans from Brazil selected for their chocolatey undertones. Deep, red-hued brown pour. Carbonation is fleeting, but settles in a ring around the body of the beer.
Loads of hazelnut and chocolate up front; the richness with the vanilla addition and nuttiness almost brings out a peanut butter quality.
The palate again leads with hazelnut, but the potency from the vanilla really helps to pave the way for the cacao nibs to feature nicely on the back end. Mildly dry, with a touch of earthiness and tobacco balances that rich, baking chocolate base. A steady presence from the malt bill throughout the experience really helps to round everything out.
Viscosity initially felt thin, but with time in the glass the mouthfeel really evened out and I was happy with the overall weight. Finishes with the slightest touch of bitterness, with an alarmingly smooth tail considering the ABV.
