Three years ago, we filled four Old Fitzgerald 6-year wheated bourbon barrels with an extra large version of our Pastry Mode recipe, designed for barrel-aging. 18 months later the beer was transferred into three XXO 20+year cognac barrels, where it rested for another year and a half. After aging the beer was treated with a few hundred pounds of creamy raw coconut, vanilla beans from Comoros, and hazelnut coffee. The resulting beer is intensely decadent; a rollercoaster of flavors starting with a huge hazelnut aroma, continuing with creamy coconut and vanilla, and ending with a touch of coffee roast and lingering warmth from the cognac and bourbon.

Had on tap. Well it took going to Rome to try my first Moska beer, go figure. Midnight black tarry pour, no head. Smell is rich with cognac backed hazelnut, dessert like coffee, coconut, vanilla and chocolate with supporting barrel, bourbon, and caramel, wow this is impressive. Taste is adjunct city up front in true dessert stout fashion, some bitterness of the coffee strikes the middle well, but the barrel is pretty hot on the finish. The middle is the sweet spot where it all comes together, but it doesn't stay like this for long. Feel is warm verging on hot in the finish and in general is viscous and heavy, with rich textures that scream diabetes, suppressing the complexity of the barrels.

Angrily burnt dark brownish black with a fluidly bubbly head that quickly dies off. It surprisingly does not stain the glass, but instead leaves some clear wine-like legs.
The nose is like tiramisu and hazelnut wafer.
The palate is viscous but not gloppy, a little sharp and boozy, and more forward of fresh coconut followed by dark chocolate and a faint touch cognac, but not enough to clean up the sticky finish.

Sweet hazelnut mocha coffee, milk chocolate, vanilla-coconut, and a balanced bourbon barrel nose on this one! Taste follows with some sweet milk chocolate and nutty coconut upfront...and then a well-integrated, cognac and bourbon barrel boozy finish. The cognac barrel becomes a little more assertive as it warms...makes it just a touch hot on the backend. This is just such a well-done and quality made double barrel aged pastry stout. Absolutely fantastic!
