Imperial Stout aged 26 months in Tawny Port barrels with Congolese vanilla beans.
Sometimes a beer just needs time. And maybe vanilla. In our samplings at the 16 and 20 month marks for this stout aging in Tawny Port barrels, we could see some pretty cool flavors developing, but they were certainly taking their time. At the two year mark, the port was finally starting to shine, and the oak itself was starting to lend some rich, spicy undertones to the beer. We opted for the addition of Congolese vanilla beans as a finishing component to drive those fruit and spice flavors home.
The result is an exceptionally smooth, well-aged stout with an incredible jamminess and fruity complexity. The vanilla shines in a supporting role but doesn’t overwhelm, with the barrel spice and a gentle hit of tannin coming in at the end to wrap things up.

Dark chocolate and red wine, sweet vanilla, and a vinous, port wine barrel nose on this one! Taste follows exactly with a medium-bodied, chocolate and creamy vanilla, sweet port finish. As it warms, the vanilla starts to pop more...as well as a little tannin from the port barrel. Really good stuff!
