long aged mixed culture brew, tart and woody, done with mangoes and matcha or green tea or something, really pretty good. its sourer than it needs to be, which breaks down some of the complexity into acidity, but the flavors are impressive here, and its cool these guys are dipping into the wild stuff, they do everything else so well why not. the mango makes this sweet in the center, a nice counterpoint to the sour, and the tea is floral and bitter at the same time, giving this quite a dynamic taste, hits all the senses, all parts of the palate, its sweet and sour, its herbal and bitter, its woody but its light. the tea is there the whole time, springy up front, more concentrated and earthy later on, and it also kind of balances out some of the acid. i get a white wine vibe to the oak profile, very light wheat and pils type malt base, and spritzing carbonation moving it along. cool mix of flavors here, very mature sour base, fun flavors on top of it, i dont think tea gets used enough in beer, and this is a neat usage. the mango is natural and fresh and juicy too, which gives some needed life to this. looking forward to drinking some more of their wild stuff as they roll them out. this place rules.
