In case you hadn’t noticed, we’re absolutely massive fans of Simcoe here at Polly’s. Arguably the hop that changed craft beer forever deserves all the plaudits, and we’ve decided to showcase it here with a single-hop behemoth of an IPA. We dumped a massive 25kg of Simcoe into this beer and the result is an IPA absolutely bursting with everything we come to expect from this incredible hop – piney and resinous on the nose, but an explosion of tropical fruit notes on the palate. Simcoe, it goes without saying we absolutely love you.

Pours a hazy, orange coloration with a medium, fluffy head. Smells of light biscuity malt and citrus/tropical notes of grapefruit anmmd passion fruit, as well as some earthy/herbal undertones. Taste is a great balance between light biscuity malt and resinous, earthy/herbal hops, with some citrus/tropical notes of grapefruit, passion fruit as well as pine also coming through. Finishes with a medium bitterness and some resinous, earthy, herbal hops lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.

A rather nice single-hop IPA that showcases Simcoe very nicely, with the resinous, earthy, herbal notes coming through particularly, as well as fruity citrus and tropical accents. Body and mouthfeel feel just a little lacking, but really not too bad. Certainly quite enjoyable all in all.
