Proving that we can pick up names for our beers at any given opportunity; Rustic was named for the description of a bar in rural Wales Arron happened upon whilst scouting for new business. Stumbling over his words whilst describing the look of the place ended up birthing the perfect name for a piney, hoppy IPA. With us being unashamedly quite vocal about our love of hybridising classic West Coast IPAs here at Polly’s, the old school bite in the beers we grew up loving is on display in this beer, with resinous punchy hops melding with new school haze.

Pours a hazy, deep golden amber coloration with a medium, fluffy head. Smells of biscuity, slightly grainy malt, some faint tropical/stone fruit aromas and earthy/herbal, piney accents. Taste is a good balance of biscuity, grainy malt, and quite earthy, herbal, resinous hops, with some lighter tropical/citrus fruit notes of papaya and grapefruit, as well as a heavy dose of pine and some black tea. Finishes with a medium/strong bitterness and some resinous, earthy, herbal notes lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.
While this may not be your typical West Coast IPA, with its quite earthy and herbal, almost pungent, character being rather dominant and even overshadowing those resinous, bitter notes somewhat, it's also nicely rounded out by ligher, zesty citrus fruit and some tropical accents as well, which provide a certain balance here. While this may not be for everyone, I personally rather enjoy the bold display of Chinook and Columbus here, which is barely kept in check by the Citra and Ekuanot. While this may not quite achieve what it sets out to on the label notes, it's still a rather bold and intriguing brew in its own right, which is a welcome diversion from those overly juicy and fruity brews that are so omnipresent these days.
