Jim Morrison hit the nail on the head in The End – The West is the best. After successful forays into the style that made us fall in love with beer in the first place with Change, Irreversible and Transit Culture, there was only one logical step to go from there. Go big or go home, and brew up a huge DIPA.

A big three-C classic hop combo of Chinook, Citra and Columbus are at play in this loving homage to the OG craft trailblazers of America, without whom we wouldn’t exist today. A DIPA in perfect balance – sweet, biscuity malts initially, before an onslaught of piney, resinous hops, rounding off with a lingering bitter finish. Treat it gently, this one bites!

Pours a cloudy, golden amber coloration with a medium, fluffy head. Smells of biscuity malt and citrus hops, with notes of grapefruit and distinct herbal accents. Taste is a great balance of sweet'ish biscuity malt and bitter, herbal, earthy, spicy and resinous hops, with fruity citrus notes of grapefruit and lime peel, as well as some pine and just a hint of licorice. Finishes with a medium/strong bitterness and some grapefruit, pine and herbal accents lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.

This makes for an interesting West Coast IPA that is not quite what I expected, but rather enjoyable in its own way. While it's a little bit too sweet and boozy for my personal taste, it's really not that bad for the ABV and makes up for that with a rather distinct, almost pungent, herbal and earthy character, as well as some spicy accents, that almost overshadow the resinous, bitter notes a little here, with a nice, but not quite aggressive bitterness in the finish. Overall, a great, somewhat unique example of the style that is dominated by herbal and earthy elements, with some of that bitter, resinous character expected of the style, as well as a solid, sweet'ish, biscuity malt backbone.
