Galaxy and Mosaic. The two hop varietals that put us on the map with one of our very first beers, way back in those halcyon Loka Polly days. After seeing an absolute tonne of both in our hop store, the decision was made for us to go back to this holy grail pairing for the brewery. But what to do to differentiate it from that original version?

Why not ramp up the hop bill to an insane 50kg, for a hopping rate of 24g/l – in other words, hop an IPA at the same rate as one of our DIPAs? Galaxy is front and centre here, showing just exactly why it’s one of the most sought after varietals in brewing today, with its passionfruit, peach, and pineapple accentuated by our similarly generous use of Mosaic during fermentation.

Pours a hazy, deep orange coloration with a medium, fluffy head. Smells of light biscuity malt and tropical, stone fruit and berry hops, with notes of passion fruit, peach and just a hint of blueberry. Taste is an excellent balance of light biscuity malt and juicy, earthy, herbal and resinous hops with fruity tropical, stone fruit and lighter berry notes of passion fruit, pineapple, peach, blueberry and gooseberry, as well as some pine. Finishes with a light/medium bitterness and some passion fruit, peach and pine lingering in the aftertaste. Soft mouthfeel with a medium body and carbonation.

I don't think I've ever had a straight up sweet and juicy tropical fruit punch NEIPA from Polly's and that's what I love about them, their brews are always a little more interesting than that, with this striking a great balance of some juicy tropical and more earthy, herbal and slightly resinous hops, while also featuring quite a striking array of tropical, stone fruit, berry and perhaps just the merest hint of citrus notes as well.
