We’re at our best here at Polly’s when we just let our hair loose and allow our natural instincts to dictate how a beer is going to go. When we first founded our then-fledgling brewery back in 2018 it was always with the idea that we’d rather excel at a narrow number of styles than spread ourselves too thin and just be mediocre at a lot of styles, hence our favour for sitting in the pale and hoppy lane with our beers. Fashion is our brew team doing exactly what they do best – an India Pale Ale positively saturated with to the nines with flavour. A hot side addition of the wonderfully complex Ekuanot sets a base line of herbal and savoury bitterness on this beer, before going all out on the cold side – a hearty lashing of our new favourite cold side combo in Simcoe and Strata comes in with a tropical punchbowl of flavour to remind you that yes, this is a Polly’s IPA you’re drinking. Expect passionfruit, zingy citrus, and stonefruit sweetness backed up with those wonderful dank notes in this all out, maxed up IPA.
