Collaboration with Pastore Brewing and Blending.
It’s a classic to bring a sour to the party for our annual birthday releases, and when we were looking for a brewery to help us create just the types of sours we love here at Polly’s, we couldn’t look further than the excellent work that Pastore were producing down in Cambridge. A brewery we had a humorous first encounter with - our resident representative of all things Polly’s Arron accidentally hijacking a meet the brewer they were holding in London (before apologising profusely and passing the reins back to Ben and Chris!) back in 2020, we’ve revelled every time we’ve been able to find their beers in bars local to the brewery. Wanting to leap on our shared passion for heavily fruited sour beers, we wanted to create a beer that was equal parts sweet and moreish, but with a defined puckeringly tart edge - step forward passionfruit and lime. Our collaboration beer brings over a tonne of fruit to the party to create a thick, pulpy sour that has that sweetness that sends our fans wild, but with a big hit of dry limey sourness that hits right in the cheeks.
