If nothing else, we’ve been pretty taken by the concept of the mountain IPA. Since that infamous first introduction when a starry eyed set of brewers first met OG craft titan Doug Odell in 2020, it may not be a style that is a constant feature of our output, but boy do we do it well when it does crop up.

Tranquil Behaviour is a continuation of our exploration of how to make the perfect Mountain IPA – east coast or west coast water profile? Heavy on the cold or hot side hops? We’ve gone with our usual Polly’s hazy grist profile on this beer, paired up with a West Coast water profile, fermented out with LA3 to hold as much of the good stuff within the beer as possible.

And the hops! How about the hops? Keeping it old school on the both the hot and cold side with Simcoe and Columbus during the boil and whirlpool to impart some pithy citrus rind bitterness to start, before cold side additions of the same produce bright fresh citrus fruits and bold resinous notes to round things off.

Pours unclear golden yellow with a mid-sized white head. Stable, Settlesxa auneven, lumpy layer of foam unable of covering the surface of the beer. Substantial lacing.

Aroma is fairly intense with a sweet odor of tropical fruits mingling with a tart, citric scent. Sweet peach and pineapple. Hints of ripe mango. Grapefruit and lemon.

Slightly thick, oily, soft, a bit smooth, lightly tingling texture.

Flavor is fairly intense with a medium strong sweetness followed by a stronger bitterness. Aftertaste is bitter. Linhers for a while. Finish is rather dry.

Potent zesty brew.
