i think these guys have to be among the best in syracuse, i had liked their hoppy stuff before, but was totally blown away by the funky beers we had when we were in, everything was excellent, a lot of it very mature and unique too, and i just had no idea they were doing this sort of thing so well, impressive from top to bottom! this is a barrel aged golden sour with apricots and a nice dry hopping on it. a rather well refined beer, with just a tiny bit of sediment to it but still a nice shine and plenty of visible carbonation collecting into a nice inch of white head. shocking complexity to the nose here, really tart, but some cool white wine and oak nuance and tannins, grapey for sure along with the apricots, which are natural but not too sweet here at all, and some bretty funk well set in, dry and piquant, delicate but distinct, really appealing! the flavor is just as good, most of the apricot comes at the end, very nice with the light vanilla i get from the oak, and the effervescent carbonation kind of rushes through the acidity here so its never too sour to drink, even when it warms up a little. the fruit is obvious, but its just one of many elements at play in the flavor of this, the hops are fruity with a hing of passion fruit and orange to them, no bitterness at all, and delicate to me. i love the fermentation profile, the obvious maturity, and the attention to detail here, this is so much more than another apricot sour, and all of us who shared it were over the moon on it. gorgeous packaging here too, and fairly priced. these guys have a real good thing going on right now!
