once i got a taste of the funky stuff in here, i felt like i couldnt leave without trying it all. they were all so good, and beyond that, all really different from each other, super impressive. this is a darker and stronger sour, chestnut colored and fizzy, aged a year and a half in red wine barrels with all kinds of herbs including lemon balm, chamomile, rose hip, and something called chincona bark, which i know absolutely nothing about. this one is a little more acidic than the others i had, but its not harsh, lots of wood on it to mellow that, some serious berry and dark fruity character from the wine too adding a little sweetness and contrast, so this still seems balanced to me. the high alcohol is barely there, and the lively carbonation keeps it from ever being heavy, i drank this way to fast. i get the rose hip in front of the other elements in this, a dried floral and hibiscus sort of complexion to this, a little tea-like bitterness and dried herbal thing with it, but also a fragrant freshness and a kiss of raspberry, really sexy. the other herbs are well integrated and seem to love the funk and the wine. i like the darker malts in here too adding depth, and the layers and waves of flavor keep coming long after the swallow on each sip. some cool brett character along with all the bacterial pucker, this is the best of both worlds there. a sort of gin quality to the finish, a fast onset dryness, and a very herb forward recall on the swallow, just delicious and intricate beer, almost an oud bruin to me, very impressive stuff happening here! loved this.
