im not going to say this was my favorite beer in here, because everything we had was professional and unique and delicious, but this was my favorite. frankly, it was the beer surprise and one of the best beers of our whole trip back east, i was completely floored by it, i didnt even know these guys were doing these sorts of beers, especially at this level, just wow! this is a blended mixed fermentation brew done with spruce tips in oak barrels, its incredibly mature, funky, bright, and distinctive, and i thirst for more of it as i reflect on it now. this is pale straw colored liquid with a high white head on it from the tap, looks sexy in the little wine glass they serve it in. aroma is fresh spruce immediately in my brain, even a gentle sniff permeates deep, as natural as can be, pungent and honest, reeks of spring even in winter here, supported by all kinds of bretty funk, oak, ripe stone fruit, high end white wine, and earthy wheat and pils malt, just a glorious mix of aromas in this, lightly lemony, mellow pucker, unique and well refined and special. the taste is just as good, the spruce leads the way but the fermentation profile and barrel and blend characteristics make it next level, really artfully done, and its not real sour which i love, well established brett way in front of the acidity for me, even at temperature, although i hardly let it get there, i cant set this down. almost a lambic level of weirdness to this, but the freshness of the spruce brings it back each sip, citrus all around too, peach, french melon, its all here. dry and fizzy, delicate but really memorable and flavorful, just a stunning beer really. now i wish i lived closer to these guys!
