Agave Spirit Barrel Aged DIPA

Pours an aging copper color with a slight burnt amber hue. Heavy haze to the translucency. Head is two fingers of dense off-white foam. Aroma is really wild and intriguing. It pairs agave spirit, which isn't necessarily hot, just spicy, out front of oak, and herbal and heavy grassy hops. It smells full, but never boozy. Flavor profile leans into agave spirits at the onset again. Agave spirits bring a semi-heavy heat and sugary-ness. Hop notes of herbal and grassy hops add some firm stickiness to the middle with toasty malts sealing up the finish. Mouth feel is medium in thickness with a soft texture throughout. It feels 'rested' in terms of texture, a little less lifeless. Overall, one of the most interesting beers I've sipped in 2023. It works well together despite the wild pairing.
