Our Sun, Moon & Sours Berliner Weisse with watermelon puree, fresh mint leaves and a touch of lime. It is as good as it sounds!

This one is almost clear, with a very pale straw tint (SRM 2). One inch of dense, white froth holds at one-quarter inch after a minute. A profusion of tiny carbonation is emitted from the nucleation site at the bottom of a Strangebird IIPA glass. Spotty lace forms chains.
The aroma has a minimal level of sour watermelon, followed by salty brine in equal proportion. These delicate components produce a surprising amount of character.
Unlike the aroma, the watermelon is very obvious right out of the gate. Immediately following is a tidewater brine and gym socks. Strawberry, lime, and peach follow behind and hold the middle ground. Mint is mild and only displayed toward the end. In general, the finish is sweet, with a mild tartness that lingers.
The body is light to thin, with a texture similar to fine silk. Carbonation is ample, though lower than expected. The alcohol, while faint, is still present and higher than expected. The finish is dry.
This beer is mouth-watering and refreshing. The mojito name is fitting as it could almost replace dry Champagne during a breakfast celebration. This beer would be best served during special occasions in the summer. Much thanks to Dave.
