Our imperial stout backs off on the roasted barley and chocolate malt in favor of a delicate balance of crystal malts and an array of other dark malts to create deep layered flavor. Thick, smooth, and slightly dry on the finish with a crisp bitterness, We taste spirit soaked dark chocolate, toasted almonds, and lightly smoked plum raisin.

For me, after years of super strong, super sweet pastry candy stouts, I am thinking this is the perfect stout. Not too strong, definitely not too weak, not too sweet and not too roasty/black coffee. Just lovely.

Sampling a cellar temp 16 oz can poured into my snifter. I picked up a 4 pack of this beer at the brewery yesterday. Tox labels this as an imperial stout and at 9.5% I agree.
The beer pours a dark black coffee color with a spongey tan head of 2 cm foaming up from a gentle pour. This foam fades slowly and creates some large craters on its surface as it fades. I do get some dense clingy lattice as I swirl or take a sip from the glass.
the aroma is fairly straightforward with a lot of roasted malt notes and some dark chocolate. I get a little anice and some black coffee too. No adjuncts or sweetness coming through on the nose.
First sip reveals a medium body with very fine and tingly carbonation. Texture is smooth and creamy and the beer drinks very easy for a bigger ABV.
Flavor is nice and roasty with some dark chocolate, hints of toffee and again some black coffee. I do get a little brown sugar and milk chocolate and then a little bite of ABV warmth on the swallow. The sweeter chocolate note is what lingers and I dont get any hops on this beer.
A well made and straight forward imperial stout, which is nice to find in the days of adjunct laden overly sweet stouts. Glad to have 3 more cans in the cellar.
